• A Dungeness crab can taste with its feet. Chemoreceptors on each leg detect amino acids in seawater from up to 1 kilometre away, letting the crab follow a scent plume straight to a clam bed in complete darkness. When it finds prey, the crab uses its claws to crush shells up to 5 millimetres thick — a grip force equivalent to a human squeezing a baseball until it fractures.
• Every winter, up to 100 million Dungeness crabs migrate south along the California coast in a single synchronized wave. Fishers call it 'the race' because the timing is so precise: crabs leave their summer feeding grounds in Alaska and Canadian waters between September and November, travelling up to 160 kilometres, all to reach warmer breeding grounds before January. A single crab can gain 40% of its body weight during the summer feast, storing energy for months of travel without eating.
• Dungeness crabs are born as microscopic larvae and spend their first weeks drifting in ocean currents as plankton. Of the thousands of eggs a female carries, fewer than one in 10,000 survives to adulthood—yet enough make it to maintain fisheries worth over $200 million annually along the Pacific Coast. The crab's journey from invisible larva to dinner plate takes about 3 years.
• A male Dungeness crab's shell hardens only once per year, during a brief window after it molts. During this vulnerable weeks-long period, the crab hides in sand or under rocks and cannot feed or mate. After 15 to 20 molts over 6 to 7 years, growth slows and eventually stops — the crab has reached its final size and will never grow again.
• Dungeness crab blood contains copper instead of iron. This copper-based hemocyanin lets their blood carry oxygen efficiently in cold, low-oxygen ocean water where they hunt along the seafloor. The same molecule gives the crab's blood a blue tint and allows it to survive in waters so cold and dark that few other bottom-feeders can compete — a biochemical adaptation that made this species one of the most commercially valuable crabs in North America.
