About the Sargo

The sargo, Diplodus sargus, cuts a striking figure in the coastal waters of the northeastern Atlantic and the Mediterranean. Its deep, somewhat compressed body arches high, cloaked in a silvery-grey sheen that darkens toward the head. Nine vertical bars, alternating dark and light, run along its sides, while a dark saddle blotch marks the caudal peduncle and a black spot crowns the pectoral fin base. Adults reach up to 45 cm, though most are around 22 cm, and can weigh as much as 1.9 kg. Beneath the dusky dorsal and anal fins, the forked tail ends in a black rear edge, completing a palette that blends seamlessly with the surf-zone habitats it prefers. By day, the sargo schools near rocky bottoms interspersed with sand, from the surf zone down to 150 m, and the young hide among Zostera beds and estuarine nurseries. An omnivore, it grazes algae, snaps up sea-urchins, worms, gastropods and amphipods, and has even been observed cleaning mullets such as the thick-lip and flathead grey mullet. In the Gulf of Tunis, spawning peaks from March to May as waters warm from 15 °C to 18 °C, with the season extending further south. A surprising quirk has emerged in recent decades: some cooked specimens become inexplicably rubbery, a phenomenon linked to polluted waters and copper-laden anti-fouling paints, hinting at the subtle ways human activity can echo through even the most familiar of fish.
