• Feed a fat sand rat a normal diet and it stays lean. Switch it to saltbush—its natural desert food—and within weeks it balloons into obesity, develops insulin resistance, and triggers type 2 diabetes. Scientists use this rat as a living model for metabolic disease because its body responds to salt-rich plants the way human bodies respond to processed food. What the rat's ancestors survived on for millennia is now, for their descendants in captivity, a metabolic trap.
• The fat sand rat can survive on plants so salty they would kill most mammals. Its kidneys concentrate urine 25 times more than a human's, and its gut actively reabsorbs salt rather than excreting it. In dunes where other rodents would die of thirst, the fat sand rat extracts every drop of water from saltbush leaves and seeds.
