• A single eastern oyster filters 50 litres of water per day — enough to drain a bathtub in 24 hours. One oyster reef can purify an entire estuary, which is why coastal cities once relied on them as free infrastructure. Before we demolished most reefs for development, oysters were the reason you could see 8 metres down into eastern harbours.
• Oysters change sex multiple times in their lives, sometimes within a single breeding season. A male might spend spring pumping sperm into the water, then switch to female in summer to brood millions of larvae in his shell — all while staying rooted to one spot. Scientists still don't fully understand what triggers the swap, but it's pure biological flexibility: if there are too many males around, more females are born, and vice versa.
• Their shells are a record of every storm they survived. Growth rings mark good years and bad ones — wide rings in calm seasons, thin rings in years when hungry predators or disease swept the reef. A 20-year-old oyster's shell reads like a diary written in calcium carbonate, each season's thickness tied to water temperature, food availability, and the sheer effort of staying alive.
• Oyster larvae spend only 2–3 weeks floating as plankton before they must find hard surface to cement themselves to — a rock, shell, or pilings. If they don't settle by day 21, they die. Once attached, they never move again. That window is so tight and brutal that oyster reefs depend on densely packed shells from older oysters to give new recruits anywhere to land — which is why a single living reef can trigger the collapse of an entire ecosystem when it's destroyed.
• Eastern oyster reefs once covered 220,000 acres across the Atlantic coast and could filter the entire Chesapeake Bay in just six days. Today less than 1% of that habitat remains, and the bay takes months to filter what oysters once cleaned in under a week. Rebuilding a single reef takes 15–20 years of protection, making oyster restoration one of the slowest conservation efforts on the continent — but also one of the most powerful, since every oyster added multiplies water quality exponentially.
